Best Big, Fat, Chewy Chocolate Chip Cookie

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 2 cups semisweet chocolate chips

Directions

  1. Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
  2. Sift together the flour, baking soda and salt; set aside.
  3. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
  4. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Easy Chocolate Mousse

Ingredients

Original recipe makes 1 9-inch pie 
  • 21 chocolate sandwich cookies, crushed
  • 1/4 cup butter, softened
  • 1 cup heavy cream
  • 1 (12 ounce) package semisweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 cups heavy cream
  • 1/4 cup white sugar
  • 1 cup heavy cream, chilled
  • 1/4 cup white sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Generously grease a 9 inch springform pan with 2 3/4 inch sides.
  2. In a medium bowl, mix together crushed cookies and softened butter or margarine. Press mixture evenly into greased pan. Bake in preheated oven for 5 minutes, then allow to cool.
  3. Combine 1 cup cream, chocolate, vanilla extract, and salt, in the top of a double boiler. Heat until chocolate is fully melted and mixture is smooth. Alternatively, if you have a food processor, you can blend mixture by placing chocolate, vanilla extract, and salt, in processor bowl. Bring 1 cup cream to a boil on stovetop, then slowly pour cream into processor with blade running. Continue to process until mixture is smooth.
  4. Pour chocolate mixture into a bowl and cool to room temperature, stirring occasionally.
  5. In a large bowl, beat 2 cups chilled cream with 1/4 cup sugar. Beat until stiff peaks form. Fold whipped cream into chocolate mixture. Pour mixture into cooled crust.
  6. Chill pie at least 6 hours before serving. Prior to serving, beat remaining 1 cup cream with 1/4 cup sugar. Beat until stiff, then pipe onto top of pie with a star tip, or place a spoonful on top of each slice.

4th of July Drinks

These drinks are so easy and fun. They are perfect for 4th of July or any other occasion, you can use any drink you want the sugar content vs. density changes it all and makes it layer.

You will need:

Cran-Apple Juice (32g of sugar)

Blue Gatorade (21g of sugar)

SoBe Fuji Apple Pear (0g of sugar)

Clear Cups

Directions:

  1. Fill clear cups with ice
  2. Fill ice cups with Cran-Apple Juice (highest sugar content) 1/3 of the cup
  3. over a spoon pour the gatorade (lower sugar content) 1/3 of the cup so there is still room for the next 1/3 of the drink
  4. Wash the spoon off
  5. Pour the Fiji Apple Pear Juice (lowest sugar content) over the spoon slowly the last 1/3 of the way.
  6. Pop a straw in and enjoy!

  • 3 cups semisweet chocolate chips
  • 1 (14 ounce) can sweetened condensed milk
  • 1/4 cup butter
  • 1 cup chopped walnuts (optional)

Directions

  1. Place chocolate chips, sweetened condensed milk, and butter or margarine in large microwaveable bowl. Zap in microwave on medium until chips are melted, about 3-5 minute, stirring once or twice during cooking. Stir in nuts, if desired.
  2. Pour into well-greased 8×8-inch glass baking dish. Refrigerate until set.
